Funfetti Cupcakes

We never need permission to celebrate ourselves. You are worthy of a celebration! Enjoy my funfetti cupcakes for any occasion, especially the special occasion of YOU.



  • 2 1/2 cups all purpose flour
  • 1 1/2 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 sticks unsalted butter, softened
  • 3 eggs plus 2 egg yolks
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups milk
  • 1 cup rainbow sprinkles


  • 1 pound butter, softened
  • 8 ounces cream cheese, softened
  • 16 ounce bag of confectioners sugar
  • food coloring


  1. Preheat oven to 350 degrees Fahrenheit. Add flour, baking powder, and salt to a bowl. Whisk together to break up any clumps and combine dry ingredients. Set aside.

  2. In a stand mixer or large bowl cream butter and sugar together. Add eggs and cream until mixture is pale yellow.

  3. Alternate dry ingredients and milk into the mixture until you run out. Mix in vanilla.

  4. Fold in sprinkles. Fill lined cupcake pans. Makes 24 cupcakes. Bake for 15-19 minutes.

  5. Remove from oven and pan. Allow cupcakes to cool on a cooling rack.

  6. Make the frosting. Cream cream cheese until smooth.

  7. Add butter and cream until smooth.

  8. Gradually add confectioners sugar until well combined. If you desire any flavoring add. I like it just like this!

  9. Choose frosting color. Only add a small amount to avoid changing the taste of the frosting. Frost cupcakes and enjoy 😊
